Summer Chicken Salad

It’s summer, you’re looking for a light – but – tasty evening meal … look no further. Allow me to introduce the warm, juicy, 100% healthy, Summer Chicken Salad.

Full of super greens in the form of kale & spinach, our ‘good fat’ friend avocado, sweet & sticky warm chicken breast, all topped off with juicy tomatoes and crunchy pine nuts. WHAT’S NOT TO LOVE.

How to make this bad boy?

You will need:

Coconut oil

One whole chicken breast

Half an avocado

2 handfuls of spinach

2 handfuls of kale

5 cherry tomatoes

Half a lemon

2 tbsp honey

2 tbsp pine nuts

Feta cheese to dress

Chicken Salad

Get your pan to a medium temp, and heat up some coconut oil.

Whilst your pan is heating up, put your chicken on a plate and cover in honey (both sides), crush 1tbsp of pine nuts and coat the chicken breast. Add to pan.

Whilst the chicken is cooking, get started on your salad.

Cut your avocado in half, scoop out the flesh and slice into chunks. Chop your tomatoes in half.

Put two generous handfuls of spinach on your plate.

To cook the kale, throw two handfuls in a pan, cover, and bring to the boil.

Reduce to a simmer and leave for 6-8 minutes.

Make sure you drain your kale properly, then marry the spinach and kale together on your plate.

On top of your leaves, and the chicken breast, avocado & tomatoes. Squeeze over some lemon juice, and finish the whole thing of with feta.

Summer on a plate!
