Strawberry Yoghurt Slab
Ok so my sweet tooth is on a whole other level at the moment, which isn’t the best when you want to keep in shape.
So when I stumbled across this fab, healthy(ish) recipe for a Strawberry Yoghurt Slab of goodness on Pinterest; I rushed out, bought the ingredients and made it that same day.
I took it to a meeting the next day and the whole thing got gobbled up between us all. It’d be rude for me not to share the recipe with you guys, right?
Head to the shop, grab a basket and pop these in it:
Cranberries (1tbsp) Raisins (1tbsp)
Fresh Strawberries (5)
– For the cranberries and raisins I bought the small kid size boxes, as you don’t need a lot for the recipe
Honey (2 tbsp)
Dark Chocolate Chips (1 tbsp) Desiccated Coconut (1tbsp) Greek Yoghurt (500g)
Mix the yoghurt and honey together in a bowl.
Add your cranberries & raisins, give them a good mix in too.
Get a baking tray and line it with foil. Now spread the yummy mixture evenly on the foil.
Mine was around half an inch thick.
Watch your fingers! Chop your strawberries up, sprinkle them, the dark choc chips, and the coconut, evenly over your slab. Easy, right?
Wake up, take the slab out of the freezer and break it up – have some for breakfast, why not?! Enjoy!
Store in the freezer (if you have any left over!)
